On January 1st, I made a New Year’s resolution to eat healthier and thus I vowed to not eat a single red velvet cupcake in 2013. What was I thinking?! Anyway, at the time of the resolution making, I made it clear to all witnesses, that the ban did not count red velvet cake or any other type of red velvet deliciousness. So when I saw this pancake mix, I had to buy it!
In honor of Pancake Day yesterday and Valentine’s Day tomorrow, I decided to make
myself Matt some red velvet pancakes with cream cheese drizzle!
The package says it makes 8-10 pancakes. Spot on – I was able to make a total of 9 pancakes.
In addition to the manufacturer’s mathematical exactitude, I, more importantly,was drawn in by the ease of preparation. Just add water.
Then I drizzled on cream cheese glaze and it was the best decision. EVER.
A few chocolate chips sprinkled on top. YES. PLEASE.
As a person who tries red velvet pancakes whenever they get a chance, I must say that these were some of the best red velvet pancakes that I’ve ever had. And Matt even said that it was the best breakfast that I have ever made him (we won’t talk about the fact that it was probably only the third time that I did more than just add milk to cereal, but still!)
